Meals these days are turning into reruns because I don't have much variety of groceries at the moment. Today's probably the first of three days of hamburgers. I'd kill for something different. Next time you are getting groceries, buy some pasta and a jar of sauce, just for something different. Or get some tortilla shells, salsa and grated pepperjack cheese and make some quesadillas. Sometimes a soup and sandwich can make a great dinner. My wife tells me all the time that once our daughter moves out, we won’t be having such elaborate meals. I’ve told her that I’d be happy with a grilled cheese sandwich or a BLT. I’ve told her that maybe we should stop with the elaborate meals now and then she might think about moving out faster!

I just got back from getting a few groceries. I meant to follow your suggestion about the pasta sau7ce to spice up the KD. One thing I've never bought before that I got tonight was potato's.....Although I may need to ask for some directions on how to cook them, lol.

I’ve told her that I’d be happy with a grilled cheese sandwich or a BLT. I’ve told her that maybe we should stop with the elaborate meals now and then she might think about moving out faster! Push that birdie out of the nest! Other cheap meal suggestions: The tortilla idea is a good one. You could buy a can of refried beans for about a dollar and make bean burritos- or you could thaw one of your bulk frozen hamburgers and chop it for a beef burrito. You can do a lot with tortillas- you'd probably find a thousand easy recipes with a quick search. As Rob said, pasta is cheap and filling and you could eat it with sauce or with cheese- or as a side. Or buy a couple cans of tomatoes (less than a buck each) and make your own sauce. Chili- make a large batch and freeze individual portions. I get bulk 3 pound logs for sauces and chilis for about $10- that much meat would probably yield over a well gallon of chili. Super easy to cook too. Dried beans- cheap, easy to store. Use them as a side dish or a main course. Start buying some frozen vegetables. Since you are single you only need to make part of the package so the bag will last a while- and will add variety to your diet. Instead of a dreary frozen hamburger, put a little corn or some peas as a side. Rice is another obvious choice- it can bought cheaply in bulk and stored for a long time. You can make just about anything with rice.

Stay away from that KD stuff! That isn’t how pasta should be served. Buy a package of pasta and you can get 2 or 3 meals out of a 1 lb package. Like DB says you can make a plain sauce with a couple of cans of puréed tomatoes, a little onion, a pinch of oregano and some salt and pepper. Simmer for about an hour until it thickens a bit. Or you can just buy a can of ready made spaghetti sauce. Just promise me that you won’t put spaghetti sauce on KD….that’s just not right! 😵💫
What kind of potatoes did you buy? Russet or Yukon gold (yellow) potatoes? I guess either can be used for roasting. We used to peel them and quarter them. Put them into a bowl and drizzle some olive or canola oil over top and mix it all together to coat the potatoes. Spread them onto a baking tray and put them in the oven at 400 for 35-45 minutes, flipping them a few times during the cooking process. When they start browning, they should be done. This is one of my favourite potato sides.
Look online for recipes.

We get the Lidl brand mac & cheese- it costs 33 cents per package

I usually put a crushed garlic clove into the potatoes too before giving them a mix with the oil in the bowl. That way the oil gets infused with the garlic and coats the potatoes. I haven’t seen Lidi up here but that could just be a store brand. Our store brands are Presidents Choice, No Frills and Selection to name a few and you are right, the generic, no name ones are just the same. We also go to a store up here called Bulk Barn where you can buy your food in bulk out of big bins. I have seen elbow macaroni and also the powdered KD cheese. We go there to buy my Sugar Twin for coffee and spices for cooking. The Sugar Twin is about 2/3 the cost of a box of the stuff in a grocery store.

This all sounds a bit too elaborate for me. I've never used spices of any kind.
I bought Russet potatoes....The store had yellow potatoes, which I'd never heard of, but I figured Russets, which I'd heard of in commercials, were probably safe. (I'm not at all comfortable with any sort of exotic foods. My idea of cooking with potatoes is more along the line of boiled potatoes with butter, mashed potatoes with gravy, and home fries)
Maybe there'll come a time where I might feel a bit more adventurous and try stuff like baked potatoes, but, never having learned to cook, I want to start small.

A baked potato is hardly adventurous. Put the thing in the microwave on "baked potato" setting after you scrub it good. When it is done, cut a slit lengthwise and dump cheese or whatever else in the gap- the cheese will melt immediately. If it doesn't have a baked potato setting it probably takes 5-8 minutes- but check on that. Just saying! But the real point is you need some variety in your diet and even if you didn't learn to cook, I'm sure you can heat up half a can of refried beans and slop it into a tortilla and sprinkle cheese on it. Or put some frozen vegetables in boiling water as a side side. And BTW as Rob points out, KD is not a premium product. You can get the no frills brand for a fraction of the cost and you wouldn't know the difference.

Russets are good for baked, roasted or friend fries. Yukon Gold or yellow are good for mashed potatoes and fries. Like DB said, you can do a baked potato in a microwave or wrap it in foil and bake it in the oven at 400F for an hour. Either way, make sure you poke some holes in the potato before cooking them this way or they will explode. Be adventurous….look online for some recipes. You need some new flavours in your life. 👍

So I’ve had a hankering for a panzarotti (calzone) for a few day since it was brought up a few days ago by someone here. So the restaurant we went to tonight used to make the best panzarottis years ago. I remember the whole engineering department used to go for Friday lunches at this restaurant when I worked at TRW. Most of us would order the panzarottis. Well tonight, I could have had so many delicious looking items but nope, the word PANZAROTTI kept jumping out at me. So that’s what I ordered along with a “Birra Peroni”. The Panzarotti wasn’t as big as I remember them being 25 years ago but it was every bit as filling and delicious. Finished off the meal with a Venetian cannoli and a cappuccino. So tonight, I ate “Italian style”. I’m stuffed

Made some potatoes for lunch. Not my biggest cooking success. Loading them with ketchup made them sort of edible, but I'm not looking forward to repeating the process.
I think I'm going to need a cheese pizza for supper to make myself feel better.

Potatoes definitely will take longer to cook than they take to eat.

As stated earlier, my wife made stuffed peppers for dinner. I normally will have 1 but they were so good tonight, I ate one and a half.

We had meatballs with spätzle for dinner- a little German comfort food We haven’t had spatzle in quite some time. My wife would make spatzle as a side instead of rice with stews and things with thick gravies. Probably because she tends to make stews in the winter as warm comfort food and it’s not winter yet.

Well, that was pretty disgusting, lol. I peeled some potatoes, sliced them into rounds about 1/4" thick, and put them in the microwave. I figured if I was under-cooking them, that should solve the problem. What I ended up with was a congealed mass that I had to cut into pieces with a steak knife. Hard, chewy, not much good, but I ate it, just because it goes against the grain to waste food. I'm beginning to think maybe I should look for different food because this just isn't working out

This shouldn't be this difficult...
